How I Learned to Like Broccoli

I dislike broccoli. I actually dislike most vegetables. But my previous strategy of counting potato chips as a vegetable and marking it down as a huge victory if I put slightly less sugar in my Kool-Aid, is not working out so well for me. So I decided that I'm going to learn to like vegetables. And as Anne Shirley said, ". . . you can nearly always like things if you make up your mind firmly that you will."

So I made up my mind firmly to like vegetables. . . and I bought a mandolin slicer. The result: my life (and my salads) will never be the same again.

This idea is so simply, it can't even really be called a recipe. You set the mandolin slicer to the highest setting and "slice" the broccoli: 

As you can see, the broccoli ends up looking like it's grated. If you don't have a mandolin slicer, you could probably use a grater instead. 

And then you throw it on your salad: 



The broccoli taste is subtle enough that I can handle it, and it adds a satisfying crunch to the salad!

  1. I happen to love broccoli, especially dipped in ranch dressing. Of course, this probably erases all the healthy qualities of broccoli.

  2. Thanks for stopping by my bog recently! I learned to like broccoli in college when they served it covered in cheese sauce. :-) But then I decided that wasn't healthy, so I started just lightly steaming it. I recently had it roasted and that was wonderful, but a little more involved to get ready. I used to hate spinach until I had it in a salad - and now I love it. I hadn't thought to add broccoli in salads - good idea!

  3. This made me laugh. I'm very hit and miss with vegetables and broccoli makes me gag. I'll give this trick a try. If it doesn't work, I'm sticking to potatoes and corn.
